But our take on this all-time classic has hidden depths. There's a complex soul beneath that savage bravado. Ripe Wairau Valley fruit, a touch of fermentation on the skins, and a quick tour inside oak and acacia barrels has added layers of f lavour and texture. This is one wine that won't give it all away on the f irst sip. Nose: Smoky aromatics, with f lint, bitter lemon citrus, grapefruit and suggestions of tropical fruit, Flavours of yellow citrus, currant, paw paw and sweet herbs. Palate: Rich, slightly chewy palate with good mouthfeel, texture and harmony. Long f inish Food affinities: seafoods, salads. Donnachiara, winery located in Montefalcione (Avellino), with its vineyards that stretch along the hills typical of the Irpinia, produces white wines and red wines of high quality including Greco di Tufo, Fiano di Avellino, Taurasi DOCG but also sparkling like Santè Falanghina. Soft crushing of the selected grapes and after that cold decanting of the must fermentation at 57-60°F in steel vats for 15 days. Malolatic fermentation is not done. Full expression of it's territory, the heart of Greco di tufo, with a specific attention to all the factors of maturation of it's aroma's. Ltd, Valley Road, Birkirkara T: 2144 4400 Donnachiara Greco di Tufo: DONNACHIARA Ingredients for caramelised onions • 4 large red onions • 1/4 cup balsamic vinegar • 1/4 cup of brown sugar • 1 tbsp red wine vinegar • 1 tsp garlic flakes • 1 tsp salt • 1 dash of olive oil Ingredients for tart • Shortcrust pastry (or any pastry you prefer) • 100g of goat cheese (or Feta) • 7/8 small mushrooms • 1/2 cup of walnuts • Handful of spinach • 2 sprigs of thyme Method 1. In a saucepan, cook the onions in olive oil until soft. 2. Add the rest of the ingredients and cook down until the liquid is gone (usually about 35 mins). 3. Preheat your oven to 200 degrees. 4. Roll out your pastry and place it in a baking dish. Add your caramelised onions in a layer, topped off with mushrooms, feta, spinach and walnuts distributed evenly around the tart. 5. Top off with a sprinkle of salt and pepper and a few sprigs of thyme and drizzle some olive oil over the top of the tart. 6. Bake your tart for 25 mins and enjoy!
