The Energy and Engineering company has matured over the years, the company is now heavily involved in providing consultancy and turnkey services for projects related to fuel re- tail market. VASSALLO Group CEO Pio Vassallo presented €10,000 collected through the group's annual dress down day to Victor Calvagna on behalf of Puttinu Cares. The presenta- tion took place at the Rain- bow ward in the Oncology division of Mater Dei Hospi- tal. Director of HR & Com- munications Charlo Bonnici was also present along with HR representatives from Vas- sallo Builders, CareMalta, CaterEssence and Vassallo Group. Through this initiative man- agers and employees were in- vited to donate hours or days of leave to help in raising an attractive sum. Other activi- ties were held such as a Hot- dog day and Donut day where employees pitched in to han- dle all the necessary prepa- rations to make these events successful while also raising more money for this worthy cause. Using time-tested methodol- ogies acquired from the rec- ipe books of our forefathers combined with the latest technology and best-practice standards in dairy produc- tion, Farm Fresh Ltd aims to re-introduce this once great- ly-loved cheese back into the Maltese market. Tan-Nar is a cheese that is based on a production pro- cess that existed commonly throughout the Maltese is- lands for hundreds of years up till the turn of the twen- tieth century. Many towns used to have their very own "Mahzen tan-nar", which would specialise in crafted cheese production through heat processes. In those days, households did not have elec- tricity or gas supply and cook- ing was carried out over stone stoves filled with wood, or coal in the case of wealthier families. Either way, fueling a largescale open f lame was a laborious task! When herdsmen had excess milk, they took the fresh milk to these warehouses to turn it into cheese, which could be kept for longer periods of time. Tan-Nar cheese was made from a combination of two or three sources of milk, depending on the composi- tion of the f lock. The technique to make the cheese was a delicate process with each Mahzen's master craftsman having their own secret recipe and craft tech- nique. This created a very competitive market among the craftsmen and herdsmen – all contesting for the best tasting cheese on the island! Under British rule, all trade dealing with fresh milk be- came illegal in a bid to curb the spread of undulant fe- ver "deni rqiq". This brought about the immediate closure of all cheese warehouses and quickly wiped out most of the cheese making culture that had developed so profusely over the years. With the introduction of Tan-Nar brand, Farm Fresh intends to reignite the pas- sion for local cheese making and pick up where our ances- tors left off. They still follow the same traditional recipes and craft methods whilst us- ing modern technology to guarantee food safety to the end consumer. The current lineup consists of four tra- ditionally-inspired f lavours; plain, peppered, cumin and fennel. The product will be hitting supermarket shelves in the coming weeks.
