FOOD 12 | SUNDAY • 9 DECEMBER 2018 maltatoday Ingredients: • 1 cup of carnaroli rice (or arborio rice) • 3 - 4 cups of vegetable stock • 1 glass of dry white wine • 2 cups of spinach leaves • 2 cloves of garlic • Butter • Parmesan Cheese • Porcini mushrooms Method 1. In a large pan, add fresh spinach leaves, a tablespoon of butter and seasoning. 2. Cook down the spinach leaves and let set. 3. Once cooled, blend the spinach in a food pro- cessor. Store for later use. 4. Heat a pan adding two minced garlic cloves and a tablespoon of butter. 5. Once the butter starts to melt, add the rice to the pan. 6. Add the white wine to the pan and stir. 7. Once the wine has reduced, start adding half of the vegetable stock, ladle by ladle, stirring constantly. 8. Add the spinach purée and stir. 9. Continue to slowly add the vegetable stock, tasting periodically to test for doneness. 10. Add Parmesan shavings and a tablespoon of butter to the risotto and stir. 11. Plate the risotto and top it with porcini mush- rooms to taste.
