FOOD | SUNDAY • 15 SEPTEMBER 2019 14 maltatoday • 2 tbsp unsalted butter / vegan butter • Salt • 2 eggs / flax eggs • ¾ cup light brown sugar • ½ tsp vanilla extract • ½ tsp baking powder • ½ tsp baking soda • ½ cup dark chocolate chunks (can substitute for chocolate chips) • ½ - 2 cups shredded zucchini (if you don't like tasting long pieces of zucchini, I suggest cutting them all in half after shredding) • ¼ tsp coffee (just powder, no water) • 1/3 cup cocoa powder 1. Preheat the oven to 180 degrees Celsius. 2. In a saucepan, melt the butter on low heat, then switch off. 3. Add in the sugar and stir until incorporated in the butter. 4. Add the vanilla extract then let cool for at least 5 minutes. 5. Add in the eggs and whisk. 6. In a bowl, add the flour, cocoa powder, baking powder, baking soda, coffee and salt then mix together. 7. Make a hole in the middle and add the wet ingredients and mix further. 8. Add in the zucchini and chocolate chunks and mix again. DO NOT over mix. 9. Add the batter into a loaf tin and bake for around 50-60 min- utes. 10. Let cool completely before digging in.
