FOOD maltatoday | WEDNESDAY • 18 SEPTEMBER 2019 14 • 100g salted roasted pistachios + optional 50g extra for toppings and decoration (I really like using the salted kind for this recipe because the sweetness of the brownies and saltiness of the nuts really go together – you may use unsalted pistachios but then add some salt to the batter) • 2 organic eggs • 200g granulated sugar • 50g all-purpose flour • 1 tsp baking powder • 100g unsalted melted butter • 100g melted dark chocolate • ½ teaspoon vanilla extract 1. Preheat oven to 180 degrees Celsius. 2. Prepare a small tin and spray with some oil or butter. 3. In a small bowl, add the melted butter to the melted chocolate and mix. 4. Beat in the eggs, vanilla extract and sugar, then in another bowl add all the dry ingredients. 5. Make a hole in the middle of the dry ingredients and add in the wet ingredients. 6. Add in the pistachios last then stir the mixture using a spatula. 7. Pour the batter in the tin and add a few pistachios on top. 8. Bake for around 30-35 minutes. (I used a very small tin so baking time took longer) 9. Let cool completely before taking out of the tin or they will crack! 10. To eat later – store them in the fridge then pop in the microwave for a couple of seconds. Add some ice-cream and enjoy! 11. You can also freeze these for up to one month.
