Vegan bread pudding
Wet Ingredients
• 50g cacao powder
• 50ml date syrup (or any liquid sweetner)
• 30ml olive oil
• 800ml rice milk
• 2 ripe bananas
• Juice and zest of one orange
• 1/2 tsp cinnamon
• 1/4 tsp nutmeg
• Dash of ground clove and allspice
Dry Ingredients
• 1 loaf of stale Sourdough Maltese bread (ap-
prox. 500g-800g
• 200g dates
• 100g raisins
• 100g chopped almounds, walnuts or chestnuts
• 3tbsp flaxseed
• 9tbsp water
Toppings
• 1tbsp sesame seed
• Orange zest
• Almonds
Method:
1. Mix all the wet ingredients in a blender
2. In a large bowl cut the bread into small pieces
3. Add the blended liquid ingredients from step one to the
bowl and allow the bread to soak up the liquid for at least
one hour
4. In the meantime, combine the ground flaxseed to the
water, after some time, this combination will give an egg
like consistency
5. Add in the chopped dates, raisins and almonds
6. Using your hands, combine all the ingredients and give the
mixture some love!
7. Add the mixture to a baking dish and sprinkle some more
chopped almonds on top
8. Place the pudding in a preheated oven at 200 degrees
Celsius for 40-50 minutes
9. Let the pudding cool down for a couple of hours before
serving.
