Prepare the dressing by boiling the wine with the sugar and star anise until it has thickened and set aside. 2. Arrange the sliced oranges and mozzarella on a plate. 3. Garnish with the black olives and season with the salt and pepper. 4. Heat some olive oil and carefully add the capers. Be careful as they tend to splutter. Fry for 1 min till crisp then add to the salad. 5. Drizzle with red wine reduction and serve.
