Preheat the oven to 170C and line a baking tray with baking paper. 2. Combine the flour and baking powder in a bowl and set aside. 3. Combine the carob, coffee, sugar and butter in a saucepan, and melt over low heat. 4. Pour over a sieve into the bowl with the dry ingredients and combine until they all come together to form a dough. Add a little water if necessary 5. Roll into equally sized balls and push down onto the baking paper to form cookie shapes. 6. Bake for 10 minutes or until cooked through. 7. Allow to cool to room temperature before eating.
