Richard Sandoval Hospitality (RSH), founded by Chef Sand- oval, is announcing the grand opening of Toro Toro, a Pan-Lat- in steakhouse. Toro Toro has opened its doors at the iconic Mercury Tower in St. Julian's, bringing a unique blend of Latin flavours cuisine to Malta. Richard Sandoval's Hospitality Group has an impressive global footprint with concepts spanning 34 locations in North America alone, an additional 16 locations throughout Latin America and the Caribbean, and a presence in Africa, Europe, and the Mid- dle East, totalling over 60 loca- tions across 12 countries and 4 continents. Toro Toro: Malta's First Pan-Lat- in Celebration Located on Level 11 of Mer- cury Tower, Toro Toro by Chef Richard Sandova offers diners an authentic Pan-Latin dining experience with a modern twist under the direction of Executive Chef Dany Reyes. The restaurant can accommodate guests with 86 seats and over 50 at the bar in its spacious indoor area. Designed with influences and materials from across Latin America fea- turing artisinal muruals, vibrant colours, and touches of oak wood tastefully decorating the space, Toro Toro provides a convivial atmosphere perfect for both in- timate dinners and larger gather- ings. "As someone who respects Mal- ta's rich culinary history, I am thrilled to introduce a new dining experience that adds to the Med- iterranean cuisine variety," said Chef Richard Sandoval. "Toro Toro is a celebration of Pan-Latin flavours and culture, and we are excited to bring this experience to Malta." Executive Chef Reyes expressed his anticipation, stating, "Our menu is a curated homage to Latin cuisine, designed to foster sharing experiences and passion. It presents a contemporary take on traditional flavours, provid- ing a familiar yet distinct dining experience that will delight all members of the family." Toro Toro's dinner menu of- fers an array of tantalizing dishes starting with options "For The Table," such as Mexican inspired Smoked Guacamole made with jalapeños, avocado, coriander, limes, and served with corn tor- tilla. The Ceviche & Tiraditos section features a variety of fresh seafood, including Tuna Tataki with fermented ají amarillo, enoki mushroom, cancha praline, and coriander-chilli oil, and Peruvian inspired Huachinango Ceviche, a mix of sea bass, leche de tigre, cancha, red onion, and sweet potato. The salads range from a Kale salad with manchego cheese, pomegranate, canchas, candy to- mato, orange, and chipotle-bal- samic vinaigrette, to a Burrata salad with heirloom tomatoes, caviar, coriander pesto, black sea salt, and balsamic pearls. For sushi lovers, the Suviche rolls selection includes Acevicha- do, made with sea bass, leche de tigre, togarashi aioli, and tempu- ra shrimp, and the Angry Toro, a spicy tuna roll with cucumber, nori, avocado, and rocoto aio- li. The taco offerings are equally diverse, with options like Avo- cado with coriander cashew nut aioli, pico de gallo, broad beans, and crispy quinoa, and Soft-Shell Crab with smoked paprika aioli, avocado, roasted bell pepper, and lemon. Starters include the Prime US Beef Fillet "Anticucho" Skewer, served with mirasol chilli, roast- ed corn, and heart of palm, and the Crispy Prawns, panko bread- ed prawns with melcocha sauce, arugula, and mango. The Chef's Specialties feature dishes such as Lomo Saltado, a Peruvian dish of beef tenderloin cooked with soy, red onion, tomato, crispy pota- toes, and creamy rice, and Grilled Octopus, served with miso panca sauce, rice foam, fennel, and achi- ote. The Churrasco & Grill section boasts Brazilian-style picanha steak, US Prime Beef Tender- loin, and Grilled Tomahawk, all cooked to perfection and ac- companied by flavorful sides like Truffle Fries with poblano tar- tar sauce and parmesan cheese, and Mashed Potato with butter, cream, and roasted garlic. Des- serts are equally impressive, with options like La Bomba, an ex- ploding chocolate sphere with lu- cuma mousse and almond cook- ie crumb, and Toro Toro Tres Leches, featuring passion fruit sorbet, whipped mango, and red currants. Toro Toro's bar offers a diverse selection of signature cocktails inspired by Latin American fla- vours. Highlights include the Mercado Margarita, a vibrant blend of jalapeño-infused tequi- la, passion fruit purée, and hi- biscus-rosemary foam, and the Tequila Old Fashioned, which features a modern twist on a classic with tequila, orange bit- ters, angostura bitters, and agave syrup.
