Method • Buy round courgettes, reasonable small to medium size • Wash properly and cut the top part like a lid on a pot • Empty the inside with a spoon but leave at least 2cm of thickness to keep the form • Chop what you clean in small pieces and put aside for later • Panfry some chopped onions with a little vegetable oil, depending on how many portions you are preparing • When brownish, add a little salt and pepper, then add kunserva (tomato paste) for colour and flavour, and keep cooking until you see the sauce getting ready. • Add hot water enough to have a good runny base and cook further for few minutes • Place the sauce in a dish, Place the open and emptied courgettes one next to each other on top of sauce • Use same pan, start pan frying the bacon mince for few minutes, add the pork mince and again keep cooking on for few minutes • Add the beef mince and keep cooking, add the inside of the courgettes that you put aside before and keep cooking for a little longer • Add pepper if you wish but no salt since we used bacon! • Switch off the pan, add 1 egg for every 3-4 courgettes, grated cheese and mix • Fill the courgettes with the mix in the pan to the top • Add some parmesan cheese on top and if you wish you can place the lid that you cut off at the beginning on top of the now-stuffed courgettes • Cook in the oven around 180° for approximately 30 to 45 minutes • Make sure you have enough liquid in dish • Suggestion: add cubes of boiled potatoes between the courgettes and then you have a complete meal Qarabali mimli (Stuffed courgettes) Recipe by Philip Spiteri, Chef Patron of Ta' Philip Restaurant in Għajnsielem, Gozo Busts of de Soldanis (top)and Laurent Ropa (above) at Villa Rundle
