Fruitcake
• 150g candied peel
• 250g sultanas
• 175g raisins
• 75g candied cherries
• 65g flaked almonds
• 60g brandy
• 90g apple juice
• 1tsp of each cloves,
cinnamon and mixed
spice.

Part 1. Preparing the
fruit mixture
• 150g butter
• 225g brown sugar
• 3 eggs
• 90g black treacle
• 150g flour
• Pinch baking soda
Part 2. Making the cake
Method
1. Mix all together and leave in the fridge
for a week mixing it every two days
1. Cream butter and sugar
2. Slowly add eggs and black treacle
3. Add the flour
4. Mix well and add the fruit mixture
5. Mix well
6. Transfer to baking container and cook
for 2 hrs at 150 degrees Celsius (fan-as-
sisted), in a pre-heated oven.
