Baked chicken thighs in orange
Ingredients
• 2 chicken thighs, cut into two
• 2 tbsp marmalade
• 2 tbsp English mustard
• 1 clove garlic
• 1 tbsp honey
• 1 orange, juice only
• 1 sprig rosemary
1. Place the
marmalade,
mustard,
garlic, honey
and orange
juice into a
saucepan
and heat for 5
mins until the
marmalade
melts.
2. Place the
chicken
thighs in an
oven proof
dish and
season with
salt and
pepper.
3. Remove the
leaves from
the rosemary
and add to
the chicken
thighs.
4. Pour the
marinade over
the chicken.
5. Bake for 30 to
45 mins until
the chicken is
done.
6. Baste the
chicken in
juices to
form a glaze
and serve
with roast
potatoes and
vegetables.
