• 16 pieces of a sliced baguette • 100 g stracciatella cheese • parmesan cheese • Fresh basil leaves Marinated tomatoes • 20 cherry tomatoes • 2 tablespoons olive oil • 1 tablespoon red wine vinegar • 1 small finely diced shallot • 4 finely chopped basil leaves • 1 minced garlic clove • ½ teaspoon salt • fresh ground pepper 1. Start by halving the cherry tomatoes and add the ingredients together in a bowl. Combine together and let sit in the fridge for at least 30 minutes. 2. Preheat the oven to 230°C/450°F. Line a large baking tray with parchment paper and set aside. Lightly brush each side of the 16 pieces of sliced bread with olive oil, and place them on the lined baking tray. 3. Bake the crostini for about 10 minutes (or less), until the crostini are nicely golden brown and have a crisp. Let them cool slightly before topping. 4. Place the crostini in a circle shape to form the wreath. 5. Add dollops of stracciatella cheese over each crostini and top with the marinated tomatoes. 6. Grate the parmesan cheese all over and crush some fresh ground pepper.
