Located on the hotel's ground floor, the restaurant combines traditional Lebanese cooking with contemporary touches, cocktails and music. Open throughout the year, it is designed for evenings that begin around the dinner table and settle into a relaxed lounge at- mosphere as the night unfolds. Guests are welcomed with an Arabic coffee ritual, setting the tone for an experience centred on Lebanese hospitality. A Lebanese chef leads the kitchen, while Ar- abic-speaking team members add to the welcome. The name Al Kasbah comes from the Arabic word for a citadel or fortress. Inside, that inspiration takes a contemporary form, with warm lighting, rich colours and Middle Eastern influences creat- ing an inviting setting for dinner. A menu made for sharing Family-style sharing is at the heart of the menu, with a selection of mezze that encourages diners to explore different flavours to- gether. Familiar favourites include tabbouleh, hummus and smoky, fire-roasted moutabal, alongside muhammara, a combination of roasted red peppers, walnuts and pomegranate molasses. There are more contemporary signature interpretations: black hummus finished with white truf- fle and Arayes tacos filled with spiced lamb and herbs. Spicy bat- ata harra and Beirut-style prawns sautéed with garlic and tomatoes round out a spread that can be tai- lored to the table. The selection gives diners room to mix familiar dishes with some- thing new. A meal might begin with a few mezze before moving to the grill, or bring together sev- eral smaller plates to share. The menu caters for couples, families and solo diners, with options suit- ed to different appetites and occa- sions. Charcoal cooking takes centre stage The charcoal grill is a defin- ing feature of Al Kasbah's kitch- en, with a range of halal options showcasing the flavours of Leba- nese cooking. Shish Tawook pairs marinated chicken skewers with garlic sauce, while lamb chops are seasoned with herbs. Lahmeh Sheqaf fea- tures beef tenderloin grilled over charcoal for a smoky finish. Beyond the grill, slow-cooked lamb shank is served with jasmine rice and pine nuts. Fish lovers can try Samkeh Harra Beiruti, pre- pared with a spiced tomato and tahini sauce. Dessert introduces a local con- nection. The signature Malta Meets Beirut combines olive oil and citrus cake with orange blossom crème, bringing Medi- terranean flavours together in a dish that reflects the restaurant's Lebanese inspiration and Maltese home. From dinner to evening drinks The atmosphere evolves along- side the meal. Softer oud sounds give way to deeper, warmer beats as the evening progresses, shifting the mood towards a lounge set- ting. Lebanese wine is an important part of the drinks selection, along- side cocktails that complement the restaurant's approach to an evening out.
