maltatoday, WEDNESDAY, 29 JULY 2015 14 Food Summer desserts that can withstand the heat Making dessert in this sweltering heat is never an easy task, with most desserts melting into a puddle before they make it onto the table. Sure, ice cream is a great idea, or a simple fruit salad, but how many times can you serve the same thing? Check out some of Pippa Mattei's ideas for great summer recipes that will not only survive the heat but will keep diners refreshed and impressed. Pippa Mattei Serves 4 Ingredients • 4 firm but ripe peaches • 1 tbsp lemon juice • 100g sugar • 400ml Sauternes (or other sweet wine) • 1 piece lemon zest • ½ vanilla pod, split lengthwise • Fresh mint leaves Method 1. Peel 4 peaches, put in bowl, sprinkle the lemon juice and 50g sugar, stir, set aside. 2. Into pot put 400ml wine, 50g sugar, strip of lemon zest, and the ½ vanilla pod, bring to the boil till sugar dissolves. 3. Reduce heat and add peaches and cook for 5 mins. 4. Using slotted spoon, take out peaches and put into glass bowl. 5. Leave liquid in pot and continue to boil till reduced to a syrup (180ml) 6. Strain through a sieve onto peaches and leave to cool in fridge. 7. When ready to serve, put one peach and liquid into suitable glasses, garnish with mint leaves and serve. 8. Poached peaches in Suaternes Barbecued banana surprise Pippa Mattei Serves 1 Ingredients • 1 banana • 4 marshmallows • 25g (1oz) dark cooking chocolate, chopped Method 1. Peel banana and cut in half lengthways. 2. Cut marshmallows in halves with scissors. 3. Place banana on a piece of foil, cover with the marshmallows and chocolate. 4. Seal foil firmly and place on barbecue for 10-15 minutes or until banana is tender and marshmallows and chocolate melt. 5. Serve in foil packages. You can prepare this delicious treat in the oven if you are not lighting the barbecue. Simply place in the oven at 200°C for 15 mins.
