maltatoday, THURSDAY, 11 MAY 2017 14 Food Election Ingedients Serves 1 Ingredients • ½ chicken breast, cooked • ½ papaya • Large handful rocket • 1 beetroot, cooked • Handful fresh peas • Handful mint • Handful walnuts • ½ orange, juice only • Salt and pepper Method 1. Place the cleaned rocket at the bottom of the plate. 2. Chop the beetroots and place on top of the bed of rocket. 3. Peel the papaya, remove the seeds and slice and place over the beetroots 4. Flake the chicken breasts and place over the papaya. 5. Add the peas. You can blanch these in boiling water for a few mins before if you like. 6. Squeeze the juice of the orange over the top and season with salt and pepper. 7. Add the walnuts and serve. Ingedients Serves 2 Ingredients • A few leaves butter lettuce • 200g soft blue cheese (Dolcelatte) • Cashew nuts • Cherry tomatoes on the vine • Honey • Extra virgin olive oil • Sea salt • Fresh pepper Method 1. Preheat the oven to 190°C. 2. Place the tomatoes on a baking sheet still attached to the vine. 3. Drizzle with olive oil, sea salt and fresh pepper. 4. Roast for 10 to 15 mins until the skins break and set aside. 5. Plate the lettuce and dolce latte, garnish with nuts and fresh pepper and drizzle with honey. 6. Serve with crusty Maltese bread or a herb crust. Just eleven days in to the electoral campaigns and things are already getting pretty exhausting, for party leaders as well as their staff. Work days get longer and sleep becomes more and more difficult, as a result of stress as well as the longer work hours. Studies have shown that a reduction in sleep from the recommended eight hours to four results in overeating of approximately 550 calories. Multiply that by 34 days of the election campaign and you're bound to get into trouble (don't forget beach season is just around the corner). A change is sleep patterns is known to affect at least two hormones that affect hunger. Fat cells secret leptin, a hormone that sends signals to your brain to stop eating when you are full. The stomach secrets gherlin signalling the brain that it needs food. Sleep deprivation has been known to decrease leptin production and increase gherlin, resulting in lazy overeating. Although the best cure for this is to get enough sleep, the election waits for no man, so instead of waiting for hunger to strike and grab whatever is closest by – a sandwich or even worse a pizza delivery – at least have a plan to include healthy meals. Balanced salads with plenty of fresh veggies, some protein and heart-healthy fats will at least ensure our party leaders have the energy to get through the campaign.
