maltatoday SUNDAY 14 JANUARY 2018 THIS WEEK 33 Mexican chicken tacos Ingredients • 1 chicken breast • 2 tsp smoked paprika • ½ tsp ground coriander • ½ tsp ground cumin • 5 cloves garlic, finely chopped • 1 lime, zest and juice • 1 onion • 1 small green pepper • 1 small red pepper • 1 small orange pepper • Handful coriander Tomato salsa • 15 cherry tomatoes, finely diced • 1 shallot, finely diced • ¼ cucumber, finely diced • 1 lime, juice only • Handful coriander • 2 tbsp olive oil • 2 tbsp apple cider vinegar • Salt and pepper Guacamole • 2 ripe avocados • 1 clove garlic, finely chopped • 1 tsp ground cumin • 1 lime, juice only • Salt and pepper • 2 tbsp olive oil • 5 cherry tomatoes, quartered • Soft tacos • Sour cream • Baby spinach • Handful coriander Method 1. Cut the chicken breast into bite sized pieces and place in a large mixing bowl. 2. Add the spices, finely chopped garlic, lime zest and lime juice and mix well, making sure all of the chicken is coated with spice, and leave to marinate for at least an hour or ideally overnight. 3. To make the guacamole, remove the flesh from the avocados and place in a mixing bowl. 4. Add the finely chopped garlic, ground cumin and lime juice and mash with a fork until it turns into a chunky paste. 5. Season with salt and pepper and add the olive oil. 6. Mix in the chopped tomatoes and the cori- ander and place in a serving bowl. 7. To make the tomato salsa, mix the finely diced vegetables with the lime juice, olive oil and season with salt and pepper. 8. Add the finely chopped coriander, mix through and place in a serving bowl. 9. When ready to cook the chicken, add the chicken pieces to the pan and cook until browned all over. 10. Add the sliced onion and peppers and cook until the vegetables are soft and the chick- en is cooked through. 11. Add the coriander and stir through. 12. Serve in a large bowl in the centre of the table with warmed tacos, baby spinach, tomato salsa, guacamole, sour cream and extra coriander and let everyone help themselves and build their own tacos. Chicken tacos are a great idea for dinner parties as they encourage sharing, not just of food but of stories too. Make your own condiments for a great homemade option.
