With apologies to Brooke for mangling his famous line, what I'm trying to say here is that the olive (M. żebbuġ) is so quintessentially Mediterranean that wherever it grows – be it South Africa, California or the slopes of Foresta 2000 – the climate there must surely be like ours, i.e. mild winters, hot summers, not too much rain, with little or no frost or snow. Several human civ- ilisations have dawned and ran their course around the shores of the Med, and put the olive and its fruit to many uses – too many to list here. Having issued its profusion of tiny pale yellow flowers in spring, the tree is now concentrating on ripening it fruit; in the wild these will provide late-autumn sustenance for thousands of birds, not least the flocks of famished starlings Learn more about Spanish cuisine in a sustainable way!
