Last week on Gourmet Today TV, Michael Diacono and Marilu Vella prepared some festive cocktails that are great for when you have friends coming over. Eggnog Roasted apple cider punch COMING UP THIS WEEK This New Year's Eve Michael Diacono and Marilu Vella are back in the kitchen before heading off for a night on the town. They prepare some quick and easy snacks with store cupboard staples that you can whip up quickly if friends come over for a pre-party drink, or when you wake up on New Year's Day feeling a little worse for wear. Ingedients • 700ml milk • 240ml cream • 3 cinnamon sticks • 1 vanilla pod • 1 tsp nutmeg • 5 eggs, separated • 130g sugar • 175ml rum Method 1. Add the cream and milk to a saucepan with the nutmeg, cinnamon sticks and vanilla pod. 2. Allow the mixture to heat slowly without letting it boil. 3. Whisk the egg yolks with the sugar. 4. When the cream is hot, add a little bit of the hot cream to the whisked egg yolks stirring constantly. 5. Then add the egg mixture back to the pan and stir constantly until the mixture has warmed through. 6. Place in the fridge to cool. 7. Strain the mixture to remove the spices and vanilla. 8. Whisk the egg whites and add to the cold eggnog with the rum. 9. Mix well and serve with a sprinkling of ground cinnamon. Ingedients • 3 apples • 3.7 litres dry cider • 6 cloves • 6 allspice berries • 2 tsp nutmeg • 175g lemon juice • 175g orange juice • 175g soft brown sugar Method 1. Cut the apples into quarters and roast them in the oven at 180°C for 10 mins with the sugar. 2. Add the orange juice to the saucepan along with the lemon juice over low heat. 3. Add the cloves and star anise. 4. Add the brown sugar and warm until the sugar dissolves. 5. Add the roasted apples and the nutmeg. 6. Add the cider and serve warm.
