maltatoday, WEDNESDAY, 19 APRIL 2017 14 Food Easy entertaining on Gourmet Today TV The Preca sisters appeared on Gourmet Today TV for the last time this season last Saturday. They did what they do best, preparing easy meals that are great for entertaining. They started off with a dish of Asian chicken legs, braised in Coca-cola and served with onion rings on a bed of basmati rice. For dessert they made a deconstructed cheesecake with an Oreo cookie base and topped with cookies, nuts or candied fruit. Asian chicken legs in Coca-cola Deconstructed cheesecake Ingedients • ½ cup soy sauce • 200ml Coca-cola (you need the sugar so don't use diet) • 6 chicken legs, bone in • 2 cloves garlic • 1 leek, chopped • 100ml chicken stock • Basmati rice • Spring onions, to garnish Method 1. Pre-heat the oven to 180°C. 2. Heat some oil in a pan and gently fry the leeks on medium heat, making sure they do not brown. 3. When the leeks are soft, add the garlic and cook for a few mins. 4. Add the chicken legs and fry on both sides until golden brown. 5. Add the soy sauce and the Coca- cola and allow to cook for a min or so. 6. Add the chicken stock and place in the oven for approx. 1 hour until the liquid has reduced and the chicken is falling off the bone. 7. Remove the chicken from the pan and place the pan back on the hob. Allow the sauce to reduce until it thickens. 8. Serve the chicken over rice with some of the thick sauce and fresh spring onions. This recipe first appeared on Gourmet Today TV, aired on TVM on 15 April, 2017 Serves 4 Ingedients • 20 Oreo cookies • 2 tbsp butter, softened • 200g cream cheese, softened • 1 cup icing sugar • 400ml whipped cream, in two 200ml batches • 200g dark chocolate Method 1. Crush 16 of the Oreos, reserving 4 for topping. 2. Melt the butter and toss with the cookie crumbs. 3. Pour the buttered crumbs into 4 tall wine glasses and set aside 4. In a large bowl, beat the cream cheese with the icing sugar until smooth. 5. Fold in half of the whipped cream. 6. Spread over the biscuit layer. 7. In another large bowl, melt the chocolate and add the remaining 200ml cream. 8. Crush the remaining cookies and sprinkle over the top. You can use any other toppings you like. Try nuts, candied fruit and chocolate bit. 9. Cover and chill for at least 3 hours. This recipe first appeared on Gourmet Today TV, aired on TVM on 15 April, 2017.
