• 1 small pot of plain yo-
ghurt
• 2 pots sugar
• 3 eggs
• 3 pots plain flour
• 2 tsp baking powder
• 1 pot cooking oil
1. After emptying the yoghurt pot, use it to
measure the other ingredients with.
2. Line a deep 22 cm cake tin with baking
paper.
3. Heat oven to 180C Mk 4
4. Pour yoghurt into mixing bowl, then rinse
out and use to measure other ingredients.
5. Add sugar and eggs to yoghurt and beat
till slightly frothy. Add sifted flour and
baking powder. Mix well. Add the oil and
mix in.
6. Pour into the prepared baking tin and
cook for 40 mins . Remove from tin and
allow to cool.
7. You may add some grated lemon peel or
vanilla to change the flavour slightly.
8. Remove one pot flour and substitute with
one pot ground almonds.
9. I sometimes add a tablespoon of honey
when mixing in the oil. The cake is quite
forgiving. Try your own variations.
