maltatoday, WEDNESDAY, 18 NOVEMBER 2015 14 Food Local capers on Gourmet Today TV Capers have been used in Maltese cuisine for decades, and though they are full of flavour they are often overpowering if not used with caution. In Michael Diacono's first episode of Gourmet Today's second season, he makes some interesting dishes using capers. A simple mozzarella di bufala salad with oranges and crispy fried capers. Say goodbye to boring old lettuce and tomato salads! He also makes a dish of local lampuki in an orange and pine nut sauce with plenty of salty capers. Pan fried lampuki with capers and pine nuts Serves 4 Ingredients • 1 large lampuka, cleaned and filleted • Flour to dust seasoned with salt and pepper • 50ml olive oil • 2 small oranges • 1 tbsp capers • 1 tbsp toasted pine nuts • Pepperoncino • Basil Method 1. Season the fish and dredge through the flour. 2. Heat the olive oil in a large non-stick frying pan and add the fish. 3. Fry gently on both sides for about 5 minutes then add the grated rind of ½ an orange and the juice of both. 4. Cook for 1 min then add the capers and toasted pine nuts and some chili. 5. Serve at once garnished with basil leaves and orange slices. This recipe first appeared on Gourmet Today TV, aired on TVM on 13 November, 2015. Serves 2 Ingredients • 2 mozzarella di bufala • 2 oranges, peeled and sliced • 2 tbsp capers • Few black olives • Pepper and smoked salt • 350ml red wine • 2 tbsp sugar • 1 star anise • Olive oil Method 1. Prepare the dressing by boiling the wine with the sugar and star anise until it has thickened, and set aside. 2. Arrange the sliced oranges and mozzarella on a plate. 3. Garnish with the black olives and season with the salt and pepper. 4. Heat some olive oil and carefully add the capers. Be careful as they tend to splutter. Fry for 1 min till crisp then add to the salad. 5. Drizzle with red wine reduction and serve. This recipe first appeared on Gourmet Today TV, aired on TVM on 13 November, 2015.
